Why Green Lentils?
Green lentils are high in plant based protein and a great source of fiber. They are also a great source of folate, potassium, and iron.

Ingredients:
4 large carrots (chopped)
4 stalks of celery (chopped)
1 large onion (chopped)
3tbsp olive oil
2 tbsp tomato paste
4 cloves minced garlic
2 tsp cumin
1 tsp oregano
1 tsp sage
1 tsp thyme
1 can diced tomatoes
6 cups of broth
1 cup green lentils (rinsed & cleaned)
juice of one lemon
1cup chopped spinach or kale
sea salt & cracked pepper
In a large pot, add olive oil and sautee carrots, celery, and onion until softened.
Add 2 tbsp tomato paste, garlic, cumin, oregano, sage and thyme. Stir.
Add 1 can of diced tomatoes.
Add 6 cups broth.
Add 1 cup green lentils.
Stir well and bring all to a boil.
Reduce heat and simmer 30-45 minutes.
Remove from heat and chopped spinach/kale and juice of one lemon.
Add sea salt and pepper to taste.
Enjoy.
